Tasting Notes

A fine example of Sicily winemaking, this Menfi DOC reflects generations of local expertise. At 12.5% alcohol, it presents a well-balanced and harmonious profile. Crafted from Grillo 100%, this wine expresses the unique terroir characteristics. It presents bright acidity with fresh mineral notes and excellent varietal expression. The fruit is sourced from vineyards 20 years old vines in a clayey mineral soil at 220-230 metres above sea level. Organic farming. Vinification: destemming, cold maceration for 36 hours, fermentation with indigenous yeasts in steel tanks with maceration on the skins for 8 days, draining off and end of the fermentation. The wine is aged 6 months on the lees in steel tanks and in tonneaux. A wine reflecting the mineral intensity of Sicily's volcanic soils.
