Vinification: soft pressing and slow spontaneous fermentation with indigenous yeasts in steel tanks for about 3 months. Without filtrations and with minimum added sulphites only before bottling. The wine is aged 24 months on the lees in steel tanks. A wine reflecting the island's ancient indigenous grape heritage.
