Vinification

Destemming only for the 50% of the grapes, maceration on the skins in concrete vats for 48 hours and sponatenous alcoholic fermentation with indigenous yeasts. The afermentation is completed in old barriques. Without filtrations

Aging

8 months on the lees in old barriques for the 50% and new for the 50% from Burgundy
