Crafted from Catarratto 100%, this wine expresses the unique terroir characteristics. The palate is fresh and precise, with lively acidity carrying through to the finish. The fruit is sourced from vineyards over 35 years old vines in a red clayey soil rich in iron, faced to East and West. Organic farming. Vinification: destemming, spontaneaous fermentation with indigenous yeasts in steel tanks with maceration on the skins for 8 days. Malolactic fermentation. Without filtrations. The wine is aged 12 months on the lees in steel tanks. A wine capturing Sicily's sun-soaked character and ancient viticultural roots.
