The fruit is sourced from vineyards over 35 years old vines in a red clayey soil rich in iron, faced to East and West. Organic farming. Vinification: destemming, spontaneaous fermentation with indigenous yeasts in steel tanks with maceration on the skins for 8 days. Malolactic fermentation. Without filtrations. The wine is aged 12 months on the lees in steel tanks. A wine capturing Sicily's sun-soaked character and ancient viticultural roots.
