The fruit is sourced from vineyards guyot-trained vineyards on calcareous and clayey soil, at an altitude of 260 meters in organic farming. Vinification: de-stemming and soft crushing, alcoholic fermentation with indigenous yeasts without temperature control and maceration in a press of 10 hours.
