The fruit is sourced from vineyards on the north-west side of Etna, on volcano-lava soils at 750-950 meters a.s.l. Vinification: second fermentation in bottle on the yeasts according to the Classic Method. The wine is aged 50 months on the lees in bottle with manual degorgement.
