The fruit is sourced from vineyards breeding on soils composed of volcanic sands, very rich in minerals. Vinification: brief cold maceration, alcoholic fermentation in stainless steel tanks at controlled temperature, re-fermentation in the bottle according to the Metodo Classico. The wine is aged 20 months on yeasts. A wine reflecting the mineral intensity of Sicily's volcanic soils.
