Over 60 years old sapling vines from Contrada Cufurà, in Pantelleria Island, at 350 m above sea level in a hilly volcanic soil. Using only copper and sulfur, without fertilizers and herbicides. Late harvest in october

Vinification

Destemming, soft pressing, spontaneous fermentation with indigenous yeasts and maceration on the skins in old oak barrels for about 10 days, with malolcatic fermentation. A small part of the must is vinified on the skins in terracotta jars for about 5 days. Without filtrations

10 months on the skins in French oak barrels
