Crafted from Erbaluce 100%, this wine expresses the unique terroir characteristics. Expect crisp citrus and orchard fruit aromas framed by a clean, mineral finish. The fruit is sourced from vineyards from two parcels from Chavot village, with over 30 years old vines: Les Chemins d’Epernay et les Rouges Maisons. Vinification: soft destemmed, cold maceration for 24/30 hours, fermentation at controlled temperature. The wine is aged in barrel on the lees until the month of April, one month minimum in bottle.
