The fruit is sourced from vineyards in a clayey soil rich in limestone. Organic and biodynamic farming. Vinification: destemming, soft pressing and fermentation with indigenous yeats with pied de cuve in steel vats for 2 months. Without added sulphites and without filtrations. The wine is aged 6 months on the lees in steel vats. A wine reflecting Puglia's tradition of generous, full-bodied reds.
