Crafted from Pecorino 100% , this wine expresses the unique terroir characteristics. The fruit is sourced from vineyards 15 year old vines in a clayey soil at 300 meters above sea level. Organic farming. Vinification: destemming, soft pressing and spontaneous alcoholic fermentation in French oak barrels. The wine is aged 6 months in new cherry barrels and in barriques, then for 30 months in old medium toasted barrels.
