Crafted from Inzolia 100%, this wine expresses the unique terroir characteristics. Expect crisp citrus and orchard fruit aromas framed by a clean, mineral finish. The fruit is sourced from vineyards 40-years-old vines sapling vines in a calcareous, salty and mineral soil, faced to South and West. Organic farming. Vinification: destemming, cold maceration for 24 hours, soft pressing, cold settling and fermentation in steel tanks with indigenous yeasts. The wine is aged 5 months on the lees in steel tanks. A wine reflecting the mineral intensity of Sicily's volcanic soils.
