The fruit is sourced from vineyards age over 55 years old, volcanic soil, terraced hill. Vinification: pigiadiraspatura, macerazione a freddo per circa 24 ore. Decantazione per 48 ore. La parte limpida si avvia alla fermentazione invasche di acciaio da 50 hl a temperatura controllata ad opera di lieviti indigeni. Fermentazione malolattica svolta.
