Sauvignon 'Castel Ringberg' Elena Walch

This Alto Adige/Sudtirol DOC captures the distinctive personality of Alto Adige terroir. With 13.5% alcohol, it strikes a confident balance between body and freshness. Crafted from Sauvignon 100%, this wine expresses the unique terroir characteristics. It presents bright acidity with fresh mineral notes and excellent varietal expression. The fruit is sourced from vineyards vigna Castel Ringberg, with calcareous rocky soils , between 330 and 440 metres above sea level, faced to South-Est. Vinification: soft pressing, cold settling of the must and alcoholic fermentation in steel tanks at controlled temperature and in barrique for the 15% of the must. The wine is aged some months on the lees in steek tanks and, for the 15%, in French barriques for 5 months. A wine reflecting the region's cool mountain climate and precise winemaking.
