The fruit is sourced from vineyards from vines cultivated on the sandy and volcanic soil of Etna at 815-850 metres of altitude. Vinification: grapes are harvested in advance to preserve the freshness of the fruit. Soft pressing, alcoholic fermentation in steel at controlled temperature and second fermentation in bottle according to the Classic Method. The wine is aged 20 months on the lees.
