Crafted from Grillo e Insolia, this wine expresses the unique terroir characteristics. The palate is fresh and precise, with lively acidity carrying through to the finish. The fruit is sourced from vineyards vines cultivated at 260 metres of altitude on limestone hillsides. Vinification: manual harvest, soft pressing and decantation with cold sedimentation. The wine is aged 5 months on yeasts in steel and 2 months in bottles. A wine showing the island's unique volcanic terroir and Mediterranean influence.
