Crafted from Catarratto 100%, this wine expresses the unique terroir characteristics. The palate is fresh and precise, with lively acidity carrying through to the finish. The fruit is sourced from vineyards 20-years-old vine from Patti Piccolo area in Alcamo village, rooted in sandy soils at 350 metres above sea level, faced to South and South-East. Vinification: first soft pressing of the whole bunches, spontaneous fermentation in big acacia barrels for 3-4 days, second pressing with maceration on the skins for 24 hours and completion of alcoholic fermentation in steel tanks for 14 days, with malolactic fermentation. Without added sulphites and without filtrations. The wine is aged at least 6 monts in steel tanks. A wine showing the island's unique volcanic terroir and Mediterranean influence.
