The fruit is sourced from vineyards in Santo Stefano Roero of 30 years old vines, at 350 metres above sea level on sandy soils. Organic farming. Vinification: alcoholic spontaneous fermentation in concrete tanks with skins maceration for 3 days without controlled temperature. Unfiltered and unclarified. The wine is aged at least 10 months in concrete tanks (60%) and in tonneaux (40%) then for long time in bottle. A wine true to Piedmont tradition, built for age-worthy elegance.
