The fruit is sourced from vineyards alberello system on volcanic soil rich in sand, gravel and rocks. Organic farming. Vinification: drestemming, pressing, spontaneous alcoholic fermentation in steel tanks with maceration for 7 days and malolactic fermentation in oak barrels. The wine is aged 36 months in oak barrels and almost one year in the bottle. A wine reflecting the mineral intensity of Sicily's volcanic soils.
