A fine example of Sicily winemaking, this Sicilia DOC reflects generations of local expertise. Its modest 11.5% alcohol content favours freshness and drinkability. Crafted from Grillo 100%, this wine expresses the unique terroir characteristics. Its lively perlage and crisp finish make it an ideal celebratory pour. The fruit is sourced from vineyards 28 years old vines in the Contrada Samperi, rooted on a calcareous sandy soil. Vinification: soft pressing, natural decanting of the must and first fermentation in steel and woody tanks with natural yeasts. Aging fro 12 months in steel tanks, tonneaux and barriques before the second fermentation in the bottle according to the Champenois Method. The wine is aged at least 18 months on the lees. A wine reflecting the mineral intensity of Sicily's volcanic soils.
