The fruit is sourced from vineyards vines average 45-50 years in age at 650 metres above sea level on soils rich in volcanic ash. Vinification: spontaneous fermentation with only indigenous yeast in concrete tanks with skin maceration for 5 days. The wine is aged 8 months in used oak barrels. A wine reflecting the mineral intensity of Sicily's volcanic soils.
