50 years old bred on soils composed of volcanic sand and ash made rich by small percentages of calcareous clay

Vinification

Alcoholic fermentation in stainless steel truncated conical tanks at controlled temperature, followed by maceration on the skins for 10-12 days, ending with spot malolactic fermentation

Aging

12 months partly in 700 and 500 litre French oak tonneaux and partly in stainless steel, finishing with 6 months in the bottle
