Torgiano area from 200-300 mt above sea level on limestone and clay soil

Vinification

Whole cluster pressing on vertical press for 50% of the grapes, destemming by hand, maceration on the skins for 3-4 days for the other 50%, spontaneous fermentation in steel for 2-3 weeks. Without filtrations or clarifications

Aging

18 months in small new barrels of Allier and Troncais, then at least 18 months in bottle
