The fruit is sourced from vineyards on the historic district Fossa di Lupo composed of a sandy layer of 40 cm and a deeper layer of limestone. Tree-shaped vines with north-east exposure overlooking the Iblei Mountains. Vinification: alcoholic fermentation with indigenous yeast in cement tanks with contact with the skins.
