Vinification: the Grillo is harvested in 3 different harvests and the Verdejo is harvested with a low sugar concentration. It is pressed with the feet and fermented with indigenous yeasts with maceration on the skins for 5-10 days. The wine is aged from 6 to 12 months in barrique and tonneau.
