Crafted from Nerello Mascalese 85%, Nerello Cappuccio 15%, this wine expresses the unique terroir characteristics. It displays rich color intensity with complex aromas and a persistent finish. The fruit is sourced from vineyards 70-120 years old sapling vines in contrada Santo Spirito in a rocky volcanic soil at 780 m above sea level. Organic farming. Vinification: spontaneous fermentation with indigenous yeasts adding a pied de cuve with maceration on the skins for 12 days. Without filtrations and without added sulphites. The wine is aged 10 months in old barriques. A wine capturing Sicily's sun-soaked character and ancient viticultural roots.
