The fruit is sourced from vineyards vineyards up to 80 years old trained with Guyot and spurred cordon on clay and Galestro soils in the municipality of Fiesole. Vinification: alcoholic fermentation with spontaneus yeasts in barrique with 6-8 manual daily pressing. The wine is aged 24 months in French oak barriques, new for 10%.
