The fruit is sourced from vineyards 60 years old sapling vines in volcanic sandy terraced soils. Organic and biodynamic farming. Vinification: de-stemming, pressing and spontaneous fermentation for over 20 days in 220-litres terracotta jars, buried in the tuff under the sky. Without added sulphites. The wine is aged some months in terracotta jars and some in bottle. A wine showing the island's unique volcanic terroir and Mediterranean influence.
